Spinach & Walnut Linguine

30 min. till dinner!

  1. Boil Whole Grain Linguine -13.oz (follow box directions, drain, set to side)

  2. In frying Pan toast garlic on med. low ( 2 Tbsp. Olive Oil , 1-2 tsp. Garlic, minced)

  3. Blend in food processor your Pesto:
1/4 c. Waltnuts
1 1/2 c. Spinich leaves
1/8 - 1/4 c. Olive Oil
1 tsp. lemon juice
1 tsp. salt
1/2 tsp. basil
1/4 tsp. pepper

3.  In Frying Pan with Garlic:  Add 1 can of Diced/Pettite Tomatos (I prefer my canned tomatoes that come in lime juice and cilantro or with sweet oinions)
4.  Add Pesto to Frying Pan, stir and add noodles

Serve warm!  This is a yummy pasta my whole family loves!
This is a wonderful side to Salmon.  Or I usually serve it by itself with fruit.
